Harvesting safely
Here’s where those stinging hairs become relevant. Nettle leaves are covered in tiny hollow hairs that inject histamine and other chemicals when touched, causing that characteristic sting.
Always wear gloves – thick garden gloves or rubber gloves work best. Those tiny stingers can penetrate thin fabric.
Harvest young leaves in spring and early summer for the most tender, nutritious greens. Once nettle flowers, the leaves become tougher and develop gritty particles that can irritate the urinary tract.
Cut the top 4-6 inches of growth using scissors or pruning shears. This gives you the most tender leaves and encourages the plant to bush out.
Morning harvest is ideal when the plant is most hydrated.
The good news: once nettle is dried, cooked, or blended, those stinging hairs are neutralized completely. They lose their sting and become perfectly safe to handle and eat.

Nettle Frittata Recipe
This recipe, inspired by the Persian kuku sabzi, is a delicious way to enjoy the gifts of spring. It’s forgiving and adaptable, and you can use whatever greens are available to you.
Ingredients
- 1-2 tablespoons olive oil
- 5-7 large scallions, sliced
- 3 garlic cloves, minced
- 1 teaspoon ground black pepper
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried mustard powder
- 6-8 large eggs
- 1/2 teaspoon salt
- 2-3 cups finely chopped nettle leaves (use gloves when chopping fresh)
- 1/2 cup finely chopped dill leaves
- 1 cup finely chopped parsley
Instructions
- Preheat your oven broiler on high. Heat olive oil in an 8-inch broiler-safe skillet on medium-high heat. Add the scallions and sauté for 3 to 5 minutes until softened and the white parts become translucent. Add the minced garlic, black pepper, rosemary, thyme, and mustard and sauté for 1 minute more. Remove from heat.
- Mix the eggs, salt, and baking powder in a medium bowl. Whisk until well combined and slightly frothy. Gently stir in the nettle, dill, parsley, and scallion mixture.
- Heat the remaining 3 tablespoons of olive oil in the skillet. Pour the egg mixture into the skillet and spread evenly. Cook on medium heat, covered, for 8 to 10 minutes or until the bottom is set.
- Uncover the skillet and place it under the broiler for 1 to 2 minutes or until the top is cooked through. Watch carefully to prevent burning, check frequently until the egg mixture is set.
- Serve warm or at room temperature. This frittata is perfect for breakfast, lunch, or a light dinner.
Beyond frittata, nettle is incredibly versatile:
- Tea: Steep dried leaves for a nourishing herbal infusion
